- 1 teaspoon olive oil
- 0.5 yellow onion (diced)
- 1 zucchini (diced)
- 0.5 cup fresh tomatoes (diced)

- 1 cup fresh spinach
Instructions
- Heat 1 teaspoon olive oil in a large skillet over medium-high heat for 1 minute. Add 6 ounces ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5 minutes. Drain any excess fat.
- Add 1/2 diced yellow onion to the skillet and cook for 2 minutes until slightly softened.
- Stir in 1 diced zucchini, 1/2 cup fresh diced tomatoes, 1 teaspoon dried basil, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Cook for another 5 minutes, until zucchini is tender-crisp.
- Stir in 1 cup fresh spinach and cook until just wilted, about 1 minute. Serve immediately.
