  1. Heat 1 teaspoon olive oil in a large skillet over medium-high heat for 1 minute. Add 6 ounces ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5 minutes. Drain any excess fat.
  2. Add 1/2 diced yellow onion to the skillet and cook for 2 minutes until slightly softened.
  3. Stir in 1 diced zucchini, 1/2 cup fresh diced tomatoes, 1 teaspoon dried basil, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. Cook for another 5 minutes, until zucchini is tender-crisp.
  4. Stir in 1 cup fresh spinach and cook until just wilted, about 1 minute. Serve immediately.
