- 1 pound ground turkey
- 1 yellow onion (medium, chopped)
- 8 ounce sliced mushrooms
- 2 clove garlic (minced)

- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 ounce egg noodles
- 0.5 pound fresh green beans (trimmed)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat and set turkey aside.
- Add the chopped yellow onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until vegetables are softened and mushrooms have released their liquid, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute more.
- Sprinkle all-purpose flour over the vegetables and stir for 1 minute. Gradually whisk in beef or chicken broth, Worcestershire sauce, and dried thyme, stirring constantly to prevent lumps. Bring to a simmer and cook for 2-3 minutes, until gravy thickens.
- Return the cooked ground turkey to the skillet and stir to coat in the gravy. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Keep warm on low heat.
- While the gravy simmers, cook the egg noodles according to package directions. Drain well. Steam the trimmed fresh green beans for 5-7 minutes, or until tender-crisp.
- Serve the Ground Turkey with Mushroom Gravy over the hot egg noodles, with steamed green beans on the side.
