  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat and set turkey aside.
  2. Add the chopped yellow onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until vegetables are softened and mushrooms have released their liquid, about 5-7 minutes. Stir in the minced garlic and cook for 1 minute more.
  3. Sprinkle all-purpose flour over the vegetables and stir for 1 minute. Gradually whisk in beef or chicken broth, Worcestershire sauce, and dried thyme, stirring constantly to prevent lumps. Bring to a simmer and cook for 2-3 minutes, until gravy thickens.
  4. Return the cooked ground turkey to the skillet and stir to coat in the gravy. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Keep warm on low heat.
  5. While the gravy simmers, cook the egg noodles according to package directions. Drain well. Steam the trimmed fresh green beans for 5-7 minutes, or until tender-crisp.
  6. Serve the Ground Turkey with Mushroom Gravy over the hot egg noodles, with steamed green beans on the side.
