Ingredients
- 0.5 pound ground turkey (lean)
- 1 teaspoon olive oil
- 0.25 yellow onion (small, minced)
- 1.5 tablespoon taco seasoning (store-bought)
- 0.25 cup water
- 0.25 teaspoon salt
- 6 corn tortillas
- 0.5 cup shredded lettuce
- 1 Roma tomato (small, diced)
- 0.25 cup sour cream (for serving)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the minced yellow onion and cook until softened, about 3 minutes.
- Add the ground turkey to the skillet and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
- Stir in the taco seasoning and salt. Pour in the water and bring to a simmer. Cook for 2-3 minutes, stirring, until the liquid has mostly absorbed.
- While the turkey cooks, warm the corn tortillas according to package directions (microwave, oven, or skillet).
- Assemble tacos by spooning the seasoned ground turkey into the warm tortillas. Top with shredded lettuce, diced Roma tomato, and a dollop of sour cream if desired.
Notes
You can use flour tortillas instead of corn if preferred. Add a squeeze of lime juice for extra freshness. Leftovers can be stored in the refrigerator for up to 3 days and reheated.
