Ground Turkey Tacos

  1. Heat olive oil in a large skillet over medium-high heat. Add the minced yellow onion and cook until softened, about 3 minutes.
  2. Add the ground turkey to the skillet and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
  3. Stir in the taco seasoning and salt. Pour in the water and bring to a simmer. Cook for 2-3 minutes, stirring, until the liquid has mostly absorbed.
  4. While the turkey cooks, warm the corn tortillas according to package directions (microwave, oven, or skillet).
  5. Assemble tacos by spooning the seasoned ground turkey into the warm tortillas. Top with shredded lettuce, diced Roma tomato, and a dollop of sour cream if desired.

Notes

You can use flour tortillas instead of corn if preferred. Add a squeeze of lime juice for extra freshness. Leftovers can be stored in the refrigerator for up to 3 days and reheated.
