  1. Heat 1 tablespoon olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add 1 pound ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat and set turkey aside.
  2. Add chopped yellow onion, sliced carrots, diced potato, and diced sweet potato to the same skillet. Cook, stirring occasionally, for 5-7 minutes until vegetables begin to soften.
  3. Stir in minced garlic, 1 cup chicken broth, 1 teaspoon dried thyme, 1/2 teaspoon dried rosemary, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Return the cooked ground turkey to the skillet and mix well.
  4. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until the vegetables are tender. If liquid remains, uncover and cook for another 2-3 minutes to allow it to reduce slightly.
  5. Remove from heat. Garnish with chopped fresh parsley, if desired, and serve directly from the skillet.

Notes
