  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 medium minced yellow onion and cook until softened, about 3-4 minutes.
  2. Add 2 1/2 pounds lean ground turkey to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  3. Stir in 3 minced garlic cloves, 1 teaspoon ground cumin, 1 teaspoon dried oregano, and 1/2 teaspoon kosher salt. Cook for 1 minute more, until fragrant.
  4. Add 2 rinsed and drained cans no-salt-added black beans, 1 drained can no-salt-added corn, and 1/4 cup water or low-sodium vegetable broth. Stir to combine. Bring to a simmer and cook for 3-5 minutes, allowing flavors to meld and liquid to reduce slightly.
  5. While the skillet simmers, warm 18 small corn tortillas according to package instructions (e.g., in a dry skillet, microwave, or oven).
  6. Serve the ground turkey and black bean mixture in the warm corn tortillas, topped with shredded romaine lettuce. Leftovers are excellent for lunch the next day.

Notes

For extra zest, a squeeze of fresh lime juice can be added to the skillet before serving. Store any leftover skillet mixture and tortillas separately.
