  1. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the 1 yellow onion and 1 bell pepper; sauté for 3-4 minutes until softened.
  2. Add the 1 pound ground pork to the skillet, breaking it apart. Cook for 5-7 minutes until browned. Drain any excess fat.
  3. Stir in the 3 cloves garlic, 1 teaspoon dried thyme, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  4. Add the 7 cups fresh broccoli florets to the skillet. Cook for 5-7 minutes, stirring frequently, until broccoli is tender-crisp.
  5. While cooking the medley, prepare 1 1/2 cups quick-cook brown rice according to package directions.
  6. Serve the Ground Pork & Broccoli Medley over the cooked brown rice.

Notes

You can steam the broccoli partially before adding to the skillet for an even faster cook time. Leftovers are great for lunch the next day.
