Ingredients
- 1.5 pound ground chicken
- 1.5 cup white rice (uncooked)
- 3 cup water
- 0.5 yellow onion (medium, grated)
- 2 clove garlic (minced)
- 0.5 cup panko breadcrumbs
- 1 egg
- 0.25 cup milk
- 1 bunch radishes (thinly sliced)
- 0.25 cup sour cream
- 2 tablespoon fresh dill (chopped)
- 2 tablespoon butter
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Combine 1 1/2 cups uncooked white rice and 3 cups water in a pot, bring to a boil, cover, reduce heat to low, and cook for 12 minutes until water is absorbed. Fluff with fork and stir in 1 tablespoon butter.
- In a bowl, soak 1/2 cup panko breadcrumbs in 1/4 cup milk for 2 minutes. Add 1 1/2 pounds ground chicken, 1/2 grated yellow onion, 2 minced garlic cloves, 1 egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix thoroughly and shape into 8 patties.
- Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat. Fry chicken patties for 5 to 6 minutes per side until golden brown and internal temperature reaches 165 degrees F.
- Toss thinly sliced radishes from 1 bunch with 1/4 cup sour cream, 2 tablespoons chopped fresh dill, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Serve pan-fried chicken kotleti with warm buttered rice and radish salad.
Notes
