  1. Combine 1 1/2 cups uncooked white rice and 3 cups water in a pot, bring to a boil, cover, reduce heat to low, and cook for 12 minutes until water is absorbed. Fluff with fork and stir in 1 tablespoon butter.
  2. In a bowl, soak 1/2 cup panko breadcrumbs in 1/4 cup milk for 2 minutes. Add 1 1/2 pounds ground chicken, 1/2 grated yellow onion, 2 minced garlic cloves, 1 egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix thoroughly and shape into 8 patties.
  3. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat. Fry chicken patties for 5 to 6 minutes per side until golden brown and internal temperature reaches 165 degrees F.
  4. Toss thinly sliced radishes from 1 bunch with 1/4 cup sour cream, 2 tablespoons chopped fresh dill, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  5. Serve pan-fried chicken kotleti with warm buttered rice and radish salad.

Notes

Grating the onion keeps the chicken patties moist during cooking.
