- 1 tablespoon olive oil
- 0.5 pound ground chicken
- 0.5 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 1.5 cup chicken broth
- 0.5 cup water
- 4 ounce rotini pasta
- 1 teaspoon Italian seasoning (dried)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup Parmesan cheese (shredded, for serving)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat. Add ground chicken and cook, breaking it apart with a spoon, until browned, about 5 minutes.
- Drain any excess fat. Add chopped yellow onion and minced garlic to the skillet and cook until softened, about 3 minutes.
- Stir in the diced tomatoes, chicken broth, water, rotini pasta, Italian seasoning, salt, and black pepper. Bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is tender and most of the liquid has been absorbed, stirring occasionally.
- Remove from heat and let stand for a few minutes before serving. Garnish with shredded Parmesan cheese if desired.
