  1. Heat olive oil in a large skillet or pot over medium-high heat. Add ground chicken and cook, breaking it apart with a spoon, until browned, about 5 minutes.
  2. Drain any excess fat. Add chopped yellow onion and minced garlic to the skillet and cook until softened, about 3 minutes.
  3. Stir in the diced tomatoes, chicken broth, water, rotini pasta, Italian seasoning, salt, and black pepper. Bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is tender and most of the liquid has been absorbed, stirring occasionally.
  5. Remove from heat and let stand for a few minutes before serving. Garnish with shredded Parmesan cheese if desired.
