- 0.5 pound ground beef (85/15 lean)
- 0.5 tablespoon olive oil
- 0.25 cup yellow onion (diced)
- 1 clove garlic (minced)
- 0.5 teaspoon ground cumin
- 0.5 teaspoon paprika
- 0.25 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 0.5 cup bell peppers (sliced)
- 0.5 cup white rice (uncooked)
- 1 cup water
Instructions
- In a medium saucepan, combine uncooked white rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes, or until water is absorbed. Fluff with a fork.
- While rice cooks, heat olive oil in a large skillet over medium-high heat. Add ground beef and yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in minced garlic, ground cumin, paprika, dried oregano, salt, and black pepper. Cook for 1 minute more, until fragrant.
- Add sliced bell peppers to the beef mixture and sauté for 3-5 minutes, until tender-crisp.
- Serve the zesty ground beef and peppers immediately over the cooked rice.
