  1. In a large skillet over medium-high heat, brown 1 pound of ground beef and 1/2 of a chopped yellow onion, breaking up the beef. Cook until no pink remains, about 5-7 minutes. Drain any excess fat.
  2. Stir in 2 minced cloves of garlic, 1 tablespoon of mild chili powder, 1 teaspoon of ground cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute until fragrant.
  3. Add 1/2 cup of water, bring to a simmer, and cook for 2-3 minutes, stirring occasionally, until the sauce has slightly thickened.
  4. While the beef cooks, prepare the fresh salsa: In a small bowl, combine 1 chopped large tomato, 1/4 of a finely chopped red onion, 2 tablespoons of chopped fresh cilantro, and 1 tablespoon of lime juice. Stir well.
  5. Warm the taco shells or tortillas according to package directions.
  6. Serve the seasoned ground beef in taco shells or tortillas with fresh salsa, and shredded cheddar cheese and shredded lettuce if desired.
