Ingredients
- 2 pound ground beef (80/20)
- 2 tablespoon olive oil
- 1 yellow onion (large, diced (divided))
- 2 clove garlic (minced (divided))
- 1.5 ounce taco seasoning
- 1 cup water
- 16 tortillas (small)
- 2 can black beans (rinsed, drained)
- 0.25 cup fresh cilantro (chopped (divided))
- 1 lime (halved)
- 2 Roma tomatoes (diced)
- 1 jalapeño (small, minced)
- 0.5 teaspoon salt
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and 1/2 of the diced yellow onion. Cook, breaking up the beef with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Stir in 1/2 of the minced garlic, taco seasoning, and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened slightly. Season with 1/4 teaspoon salt. Set aside.
- While the beef cooks, in a separate medium saucepan, heat the remaining 1 tablespoon olive oil over medium heat. Add the remaining 1/2 diced yellow onion and sauté for 3-4 minutes until softened. Stir in the remaining 1/2 minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed and drained black beans to the saucepan. Stir in 1/2 of the chopped fresh cilantro and the juice of 1/2 lime. Cook until heated through, about 5 minutes. Season with 1/4 teaspoon salt.
- For the pico de gallo, in a small bowl, combine diced Roma tomatoes, the remaining 1/2 of the chopped fresh cilantro, and the minced jalapeño (if using). Squeeze the juice of the remaining 1/2 lime over the mixture and stir to combine.
- Warm the tortillas according to package directions (microwave, oven, or skillet).
- Serve the seasoned ground beef in warm tortillas, topped with pico de gallo and a side of cilantro-lime black beans.
Notes
Adjust the amount of jalapeño in the pico de gallo to your preferred spice level. Leftover taco meat and beans store well in the refrigerator for up to 3 days.
