- 1 tablespoon olive oil
- 1 pound ground beef (80/20 lean)
- 1 yellow onion (medium, diced)
- 1 ounce taco seasoning mix
- 0.5 cup water
- 12 flour tortillas (small)
- 1 cup cheddar cheese (shredded)
- 2 cup lettuce (shredded)
- 1 cup salsa (mild)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and diced yellow onion. Cook, breaking up the beef with a spoon, until browned and the onion is softened, about 7-8 minutes. Drain any excess fat.
- Stir in the taco seasoning mix and 1/2 cup water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
- Warm the flour tortillas according to package directions (microwave, oven, or skillet).
- Serve the seasoned ground beef in the warm tortillas, topped with shredded cheddar cheese, shredded lettuce, and optional mild salsa.
Notes
For an extra kick, add a pinch of cayenne pepper to the beef with the taco seasoning. Store leftover beef mixture and toppings separately in the refrigerator.
