Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 2 tablespoon taco seasoning
- 0.5 cup water
- 12 flour tortillas (small)
- 1 head romaine lettuce (shredded)
- 1 cup cheddar cheese (shredded)
- 0.5 cup sour cream
- 0.5 cup salsa
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add the diced yellow onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes, until the onion softens.
- Stir in the 2 tablespoons taco seasoning and 1/2 cup water. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- While the beef is simmering, warm the flour tortillas according to package instructions (microwave, oven, or skillet). Shred the romaine lettuce and prepare other desired toppings.
- Serve the seasoned ground beef in warm tortillas with shredded cheddar cheese, sour cream, salsa, and fresh cilantro as desired.
Notes
Leftover seasoned ground beef can be used for quesadillas or burritos the next day. Adjust spice level to your family's preference.
