  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add chopped yellow onion and diced carrots to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables start to soften. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle all-purpose flour over the beef and vegetables, stirring to coat. Cook for 1 minute, then stir in the tomato paste and cook for another minute.
  4. Gradually pour in the beef broth, stirring constantly to avoid lumps. Add the quartered red potatoes, dried thyme, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
  5. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
  6. Stir in the frozen peas and cook for another 2-3 minutes, until heated through. Taste and adjust seasoning if needed.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

For a thicker sauce, you can add an extra tablespoon of flour with the tomato paste. Leftovers keep well for up to 3 days.
