Ingredients
- 1 pound ground beef (85% lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 carrots (medium, peeled, diced)
- 2 clove garlic (minced)
- 1 pound red potatoes (small, quartered)
- 2 tablespoon all-purpose flour
- 1 can tomato paste
- 2 cup beef broth
- 1 teaspoon dried thyme
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 cup frozen peas
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add chopped yellow onion and diced carrots to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables start to soften. Stir in minced garlic and cook for 1 minute until fragrant.
- Sprinkle all-purpose flour over the beef and vegetables, stirring to coat. Cook for 1 minute, then stir in the tomato paste and cook for another minute.
- Gradually pour in the beef broth, stirring constantly to avoid lumps. Add the quartered red potatoes, dried thyme, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
- Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
- Stir in the frozen peas and cook for another 2-3 minutes, until heated through. Taste and adjust seasoning if needed.
- Garnish with fresh parsley if desired and serve hot.
Notes
For a thicker sauce, you can add an extra tablespoon of flour with the tomato paste. Leftovers keep well for up to 3 days.
