- 1 yellow onion (large, diced)
- 2 clove garlic (minced)

- 1 package quick-cook pasta (rotini or elbow macaroni)

Instructions
- Heat 1 tablespoon olive oil in a large deep skillet or Dutch oven over medium-high heat. Add 1 1/2 pounds ground beef and 1 large diced yellow onion. Cook, breaking up the beef, until browned and the onion is softened, about 5-7 minutes.
- Drain any excess fat. Stir in 2 minced garlic cloves, 1 teaspoon dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Pour in 1 can crushed tomatoes and 2 cups beef broth. Bring the mixture to a simmer.
- Add 1 package quick-cook pasta, stirring to ensure it is submerged. Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
- Stir in 5 ounces fresh spinach and cook until wilted, about 1-2 minutes.
- Remove from heat and let stand for a few minutes to allow sauce to thicken. Serve hot, topped with 1/2 cup grated Parmesan cheese if desired.
Notes
Use a quick-cook pasta variety to ensure the meal cooks in under 30 minutes. If using regular pasta, add a few minutes to cook time.
