Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add 1 pound lean ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add 1 each chopped yellow onion, 2 cloves minced garlic, and 1 each chopped green bell pepper to the pot. Cook for 5 minutes until vegetables begin to soften.
- Stir in 1 can undrained diced tomatoes, 1 can tomato sauce, 1 can rinsed and drained kidney beans, 1 can rinsed and drained black beans, 2 tablespoons chili powder, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 15 minutes, stirring occasionally, allowing the flavors to meld. If you have extra time, simmering longer (up to an hour) will deepen the flavors.
- Serve the hearty chili warm, alongside 1 cup cooked white rice.
