Ingredients
- 1 pound ground beef (90% lean or higher)
- 1 tablespoon garlic-infused olive oil
- 0.5 head green cabbage (thinly sliced)
- 2 red potatoes (medium, peeled and diced)
- 1 cup low-FODMAP beef broth
- 1 teaspoon dried thyme
- 0.5 teaspoon dried rosemary (crushed)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat garlic-infused olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Drain any excess fat.
- Add the diced red potatoes and low-FODMAP beef broth or water to the skillet. Bring to a simmer, then cover and cook for 10 minutes, stirring occasionally, until potatoes begin to soften.
- Stir in the thinly sliced green cabbage, dried thyme, dried rosemary, salt, and black pepper. Cover and cook for another 8-10 minutes, or until the cabbage is tender and potatoes are fully cooked.
- Remove from heat. Taste and adjust seasoning if needed. Garnish with chopped fresh parsley, if desired, before serving.
