  1. Cook white rice according to package directions, while preparing other components. Keep warm.
  2. In a large skillet, heat olive oil over medium-high heat. Add diced yellow onion and cook until softened, about 3-4 minutes. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in chili powder, ground cumin, garlic powder, and dried oregano. Cook for 1 minute until fragrant. Add black beans and water, bring to a simmer, then reduce heat and cook for 5 minutes, allowing flavors to meld.
  4. While beef simmers, prepare the corn salsa: In a medium bowl, combine drained whole kernel corn, halved cherry tomatoes, chopped fresh cilantro, lime juice, and 1/4 teaspoon salt. Stir well.
  5. To assemble bowls, divide cooked white rice among serving bowls. Top with seasoned ground beef and black bean mixture. Garnish with zesty corn salsa, shredded Monterey Jack cheese, and sliced avocado if desired.
