- 6 ounce ground beef (lean)
- 0.75 cup frozen mixed vegetables
- 0.25 yellow onion (small, diced)
- 1 clove garlic (minced)
- 1 tablespoon tomato paste
- 0.25 cup beef broth
- 0.25 teaspoon dried thyme
- 0.5 cup instant mashed potatoes (flakes)
- 0.25 cup milk
- 1 tablespoon butter
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Prepare instant mashed potatoes according to package directions, using 1/2 cup flakes, 1/4 cup milk, 1 tablespoon butter, and a pinch of salt and pepper. Set aside.
- While potatoes rehydrate, heat a medium skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add diced yellow onion and minced garlic to the skillet with the beef. Cook for 3 to 5 minutes until onion softens.
- Stir in tomato paste, beef broth, and dried thyme. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Add frozen mixed vegetables. Cook for 5 to 7 minutes, until vegetables are heated through and the sauce has thickened slightly. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Serve the ground beef and vegetable mixture in a bowl, topped with the prepared instant mashed potatoes.
Notes
For a richer flavor, you can add a dash of Worcestershire sauce with the beef broth.
