  1. Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
  3. Stir in the chopped yellow onion, diced carrots, and diced celery. Cook for 5-7 minutes until vegetables begin to soften.
  4. Add the minced garlic, dried thyme, and smoked paprika. Cook for 1 minute until fragrant.
  5. Stir in the rinsed lentils, diced tomatoes (undrained), beef broth, salt, and black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until lentils are tender.
  6. While the lentil mixture is simmering, cook the whole wheat couscous according to package directions or by adding 1 cup couscous to 1 1/2 cups boiling water, covering, removing from heat, and letting sit for 5 minutes.
  7. Serve the skillet mixture over the cooked whole wheat couscous, optionally garnished with fresh parsley.

Notes

For best reheating results, store the ground beef and lentil mixture and the couscous separately. Combine just before serving.
