  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add yellow onion to the pot and cook, stirring occasionally, until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the rinsed lentils, diced tomatoes, vegetable broth, ground cumin, turmeric powder, chili powder, ground coriander, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and the curry has thickened to your desired consistency.
  5. While the curry simmers, cook the brown rice. Combine brown rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until water is absorbed and rice is tender.
  6. Fluff the cooked brown rice with a fork. Serve the Ground Beef and Lentil Curry hot over the brown rice.

Notes

This curry freezes exceptionally well. For best results, allow it to cool completely before portioning into freezer-safe containers. Reheat gently on the stovetop or in the microwave.
