Ingredients
- 1 tablespoon olive oil
- 0.75 pound ground beef (lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 0.75 cup lentils (rinsed)
- 14.5 ounce diced tomatoes (canned, undrained)
- 1.5 cup vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 0.5 teaspoon chili powder
- 0.5 teaspoon ground coriander
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup brown rice (uncooked)
- 2 cup water
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add yellow onion to the pot and cook, stirring occasionally, until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Stir in the rinsed lentils, diced tomatoes, vegetable broth, ground cumin, turmeric powder, chili powder, ground coriander, salt, and black pepper. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and the curry has thickened to your desired consistency.
- While the curry simmers, cook the brown rice. Combine brown rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until water is absorbed and rice is tender.
- Fluff the cooked brown rice with a fork. Serve the Ground Beef and Lentil Curry hot over the brown rice.
Notes
This curry freezes exceptionally well. For best results, allow it to cool completely before portioning into freezer-safe containers. Reheat gently on the stovetop or in the microwave.
