Ingredients
- 1 pound penne pasta
- 1 tablespoon olive oil
- 1.25 pound ground beef (93/7 lean)
- 1 yellow onion (medium, diced)
- 3 clove garlic (minced)
- 28 ounce crushed tomatoes
- 1 cup vegetable broth
- 1 teaspoon Italian seasoning
- 0.5 teaspoon red pepper flakes
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 5 ounce kale (tough stems removed, roughly chopped)
- 0.25 cup grated Parmesan cheese (grated)
Instructions
- Bring a large pot of lightly salted water to a rolling boil. Add the penne pasta and cook according to package directions until al dente, about 10-12 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water, then set aside.
- While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat, then transfer the cooked ground beef to a separate bowl.
- Reduce the heat to medium. Add the diced yellow onion to the same skillet and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 1 minute until fragrant.
- Stir in the crushed tomatoes, vegetable broth, Italian seasoning, 1 teaspoon salt, 1/2 teaspoon black pepper, and optional red pepper flakes. Bring the sauce to a gentle simmer.
- Add the roughly chopped kale to the simmering sauce and cook, stirring occasionally, for 3-5 minutes, or until the kale has wilted and is tender. Stir the cooked ground beef back into the sauce.
- Add the drained penne pasta to the skillet with the sauce and stir to combine. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency. Taste and adjust seasonings as needed.
- Serve immediately, garnished with optional grated Parmesan cheese.
Notes
