  1. Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 1/2 pounds of ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add 1 diced yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in 3 minced garlic cloves, 1 teaspoon of chili powder, 1 teaspoon of ground cumin, 1/2 teaspoon of dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper, and cook for 1 minute until fragrant.
  3. Pour in 3 cups of chicken broth and bring to a simmer. Add 4 cups of broccoli florets and cook for 3-5 minutes, until tender-crisp.
  4. Stir in 3 cups of instant rice, cover the skillet, and remove from heat. Let it stand for 5 minutes, or until the rice has absorbed the liquid.
  5. Fluff the rice with a fork. If desired, sprinkle with 1 cup of shredded cheddar cheese before serving, allowing it to melt slightly.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed.
