Instructions
- Cook the white rice according to package directions, or prepare microwave-ready rice if using. Keep warm.
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the 1 1/2 pounds ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add the 1 large yellow onion and 3 cloves minced garlic to the skillet with the beef. Cook for 3-4 minutes, until onion softens.
- Stir in the 2 teaspoons chili powder, 1 1/2 teaspoons ground cumin, and 1 teaspoon smoked paprika. Cook for 1 minute until fragrant.
- Add the 1 can diced tomatoes, 2 cans black beans, and 1 1/2 cups frozen corn. Stir to combine and bring to a simmer. Season with 1 teaspoon salt and 1/2 teaspoon black pepper.
- Reduce heat to low and simmer for 5-7 minutes, allowing flavors to meld.
- Serve the ground beef and black bean mixture over the warm white rice. Top with tortilla chips, salsa, and fresh cilantro, if desired.
