Ingredients
- 1 pound ground turkey
- 0.25 cup yellow onion (finely chopped)
- 2 tablespoon fresh parsley (chopped)
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup white rice (uncooked)
- 2 cup water
- 1 zucchini (medium, peeled and sliced)
Instructions
- Preheat grill to medium-high heat. In a large bowl, combine 1 pound ground turkey, 1/4 cup finely chopped yellow onion, 2 tablespoons chopped fresh parsley, 1 teaspoon ground cumin, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined (do not overmix).
- Form the mixture into 6-8 oblong patties or small log shapes for kofta. Lightly brush the kofta with 1 tablespoon olive oil.
- Grill the kofta for 4-6 minutes per side, or until cooked through and nicely browned with grill marks. Cooking time may vary based on thickness.
- While kofta grills, bring 2 cups water to a boil in a small saucepan. Stir in 1 cup white rice and 1/4 teaspoon salt. Reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand for 5 minutes, keeping covered.
- Toss 1 medium peeled and sliced zucchini with 1/2 tablespoon olive oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Roast on a baking sheet in the oven (if also cooking the kofta indoors) or grill alongside the kofta for 10-15 minutes, until tender.
- Serve the grilled turkey kofta hot with fluffy white rice and roasted zucchini.
Notes
If fresh parsley is unavailable, you can substitute with 1 teaspoon of dried parsley, but fresh is preferred for flavor.
