- 0.25 cup red bell pepper (finely diced)
- 0.25 cup yellow onion (finely diced)

- 1 cup button mushrooms (whole)
- 4 skewers (if wooden, soak in water for 30 minutes)
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a bowl, combine the ground turkey, diced red bell pepper, diced yellow onion, 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, 1/4 teaspoon of black pepper, and 1 pinch of salt. Mix gently until just combined. Form the mixture into small meatballs (about 1-inch diameter).
- Thread the turkey meatballs, zucchini pieces, and whole button mushrooms alternately onto the skewers. Lightly brush the assembled skewers with 1 tablespoon of olive oil.
- Preheat your grill to medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until the turkey is cooked through and vegetables are tender-crisp.
- Serve hot.
Notes
Ensure the turkey meatballs are firmly packed to prevent them from falling apart on the grill. If you don't have a grill, you can cook these in a grill pan on the stovetop or bake them in the oven at 400°F for 15-20 minutes.
