  1. In a medium saucepan, combine the uncooked white rice with 3 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  2. Preheat your grill to medium-high heat. In a small bowl, combine paprika, garlic powder, onion powder, 3/4 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Pat the boneless pork chops dry. Rub them with 1 tablespoon olive oil, then generously season both sides with the spice mixture.
  4. While the pork marinates, prepare the pineapple salsa: In a medium bowl, combine the diced fresh pineapple, finely diced red onion, chopped fresh cilantro, finely minced jalapeño, and 2 tablespoons lime juice. Stir gently to combine.
  5. Grill the seasoned pork chops for 3-5 minutes per side, or until an internal temperature of 145 degrees Fahrenheit is reached.
  6. Let the grilled pork chops rest for 5 minutes before serving. Serve the pork chops hot with a generous spoon of pineapple salsa and a side of fluffy white rice.

Notes

For less spice, omit the jalapeño from the salsa. For an extra kick, leave some seeds in the jalapeño or add a pinch of red pepper flakes to the seasoning for the pork.
