Grilled Mahi Mahi with Herbed Cauliflower

  1. Preheat an outdoor grill or indoor grill pan over medium-high heat to approximately 400°F.
  2. In a small bowl, combine ground cumin, dried thyme, onion powder, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper.
  3. Brush mahi mahi fillets with 1 tablespoon of the avocado oil and season all sides evenly with the spice blend.
  4. Place cauliflower florets into a steamer basket set over 1 inch of boiling water in a lidded saucepan. Cover and steam for 6 to 8 minutes until fork-tender.
  5. Grill mahi mahi fillets for 4 to 5 minutes per side, turning once, until fish reaches an internal temperature of 145°F and flakes easily with a fork.
  6. Transfer steamed cauliflower to a serving bowl, drizzle with remaining 1 tablespoon avocado oil, season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, and gently toss with fresh parsley.
  7. Plate one grilled mahi mahi fillet alongside a generous portion of herbed cauliflower and serve immediately.

Notes

Ensure the grill grates are clean and well-oiled before placing the fish down to prevent sticking.
