Grilled Herb Sirloin Steaks with Green Beans

  1. Preheat an outdoor grill or indoor stovetop grill pan over medium-high heat for 5 minutes.
  2. In a small bowl, combine onion powder, dried thyme, dried rosemary, 1 teaspoon of the salt, and 1/2 teaspoon of the black pepper.
  3. Rub the top sirloin steaks with 1 tablespoon of canola oil, then coat all sides evenly with the prepared spice blend.
  4. Place steaks on the hot grill and cook for 4 to 5 minutes per side, until deeply browned on the outside and an instant-read thermometer reaches 135°F for medium-rare or 145°F for medium. Transfer to a cutting board and let rest for 5 minutes.
  5. While steaks rest, place trimmed green beans in a medium saucepan with 1/2 cup water. Cover and steam over medium-high heat for 4 to 5 minutes until crisp-tender, then drain any excess water.
  6. Toss the warm green beans with the remaining 1 tablespoon canola oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Serve alongside the rested sirloin steaks.

Notes

Letting the steaks rest for 5 full minutes allows the juices to redistribute for maximum tenderness.
