Ingredients
- 1 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 1 zucchini (cut into 1/2-inch thick half-moons)
- 1 yellow bell pepper (cut into 1-inch pieces)
- 0.5 red onion (cut into 1-inch wedges)
- 2 tablespoon lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon black pepper
- 8 skewers (8-inch wooden or metal)
- 4 cup fresh spinach
Instructions
- If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
- In a large bowl, combine the cubed chicken breast, zucchini, yellow bell pepper, and red onion. Drizzle with fresh lemon juice, sprinkle with dried oregano, and black pepper. Toss well to coat.
- Thread the chicken and vegetables alternately onto the skewers.
- Heat a grill pan or outdoor grill to medium-high heat. Grill the skewers for 8 to 10 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
- Serve the Grilled Herb Chicken Skewers immediately alongside 1 cup of fresh spinach per serving.
Notes
