Instructions

  1. If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
  2. In a large bowl, combine the cubed chicken breast, zucchini, yellow bell pepper, and red onion. Drizzle with fresh lemon juice, sprinkle with dried oregano, and black pepper. Toss well to coat.
  3. Thread the chicken and vegetables alternately onto the skewers.
  4. Heat a grill pan or outdoor grill to medium-high heat. Grill the skewers for 8 to 10 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
  5. Serve the Grilled Herb Chicken Skewers immediately alongside 1 cup of fresh spinach per serving.

Notes

You can also bake these skewers at 400°F (200°C) for 20-25 minutes if you don't have a grill or grill pan.
