Grilled Halloumi and Summer Vegetable Wraps

Instructions

  1. Preheat a grill or grill pan to medium-high heat. In a medium bowl, toss the halloumi slices with 2 tablespoons olive oil, 3 tablespoons lime juice, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Grill the halloumi for 2-3 minutes per side, until golden brown with visible grill marks. Remove from heat and set aside.
  3. While halloumi grills, prepare the lime crema: In a small bowl, whisk together the plain Greek yogurt, mayonnaise, 2 tablespoons lime juice, 1 teaspoon chili powder, and 1/4 teaspoon salt until smooth.
  4. Warm the flour tortillas according to package directions (microwave for 15-30 seconds or quickly heat in a dry skillet for 10-15 seconds per side).
  5. Assemble the wraps: Spread a layer of hummus down the center of each warm tortilla. Top with mixed greens, thinly sliced red bell peppers, thinly sliced cucumbers, and a few pieces of grilled halloumi. Drizzle with lime crema. Fold in the sides and then roll up tightly.
  6. Serve immediately.

Notes

You can prep all the vegetables ahead of time and store them in the refrigerator, then simply grill the halloumi and assemble when ready to eat.
