Ingredients
- 2 pound halloumi cheese (sliced into 1/4-inch thick planks)
- 2 tablespoon olive oil
- 5 tablespoon lime juice
- 1 teaspoon dried oregano
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 13 flour tortillas
- 3 cup mixed greens
- 3 red bell peppers (thinly sliced)
- 3 cucumbers (thinly sliced)
- 1.5 cup hummus
- 1 cup plain Greek yogurt
- 0.5 cup mayonnaise
- 1 teaspoon chili powder
Instructions
- Preheat a grill or grill pan to medium-high heat. In a medium bowl, toss the halloumi slices with 2 tablespoons olive oil, 3 tablespoons lime juice, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Grill the halloumi for 2-3 minutes per side, until golden brown with visible grill marks. Remove from heat and set aside.
- While halloumi grills, prepare the lime crema: In a small bowl, whisk together the plain Greek yogurt, mayonnaise, 2 tablespoons lime juice, 1 teaspoon chili powder, and 1/4 teaspoon salt until smooth.
- Warm the flour tortillas according to package directions (microwave for 15-30 seconds or quickly heat in a dry skillet for 10-15 seconds per side).
- Assemble the wraps: Spread a layer of hummus down the center of each warm tortilla. Top with mixed greens, thinly sliced red bell peppers, thinly sliced cucumbers, and a few pieces of grilled halloumi. Drizzle with lime crema. Fold in the sides and then roll up tightly.
- Serve immediately.
Notes
You can prep all the vegetables ahead of time and store them in the refrigerator, then simply grill the halloumi and assemble when ready to eat.
