  1. Preheat a grill or grill pan to medium-high heat. Lightly brush the cod fillets with olive oil.
  2. In a small bowl, combine paprika, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Sprinkle this seasoning mixture evenly over both sides of the cod fillets.
  3. Grill the cod fillets for 4-5 minutes per side, or until flaky and cooked through. Cooking time may vary based on thickness.
  4. While the cod grills, prepare the corn salad: In a medium bowl, combine corn kernels, diced red bell pepper, finely diced red onion, chopped fresh cilantro, and lime juice. Season with remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss gently to combine.
  5. Serve the grilled cod immediately with a generous side of the summer corn salad.

Notes

If fresh corn is unavailable, good quality frozen corn works well. Ensure your grill grates are clean and oiled to prevent the fish from sticking.
