Instructions

  1. Season chicken breasts with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Preheat grill or grill pan to medium-high heat, or preheat oven to 400°F.
  2. Grill chicken for 6-8 minutes per side, or bake in the oven for 18-22 minutes, until cooked through (internal temperature reaches 165°F). Let rest for 5 minutes, then slice.
  3. Meanwhile, cook orzo pasta according to package directions until al dente. Drain and rinse with cold water to cool, then transfer to a large bowl.
  4. Add cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, fresh parsley, and fresh dill to the bowl with the orzo.
  5. In a small bowl, whisk together fresh lemon juice, 2 tablespoons extra virgin olive oil, and 1/4 teaspoon black pepper. Pour over the orzo salad and toss to combine.
  6. Serve the sliced grilled chicken alongside the Mediterranean orzo salad.

Notes

Chicken can be grilled or baked in the oven. For a vegetarian option, omit the chicken and add chickpeas to the salad.
