  1. Combine 1/4 cup apricot preserves, apple cider vinegar, curry powder, and grated fresh ginger in a bowl to make the marinade. Add chicken cubes, tossing to coat. Let marinate for at least 5 minutes while preparing other ingredients.
  2. Prepare the chakalaka: In a separate small bowl, combine diced red bell pepper, finely diced yellow onion, finely diced carrot, chopped fresh cilantro, and minced jalapeno (if using). Stir well.
  3. Heat 1/2 tablespoon olive oil in a large skillet or grill pan over medium-high heat. Thread chicken onto small skewers, if desired, or cook as pieces. Season chicken with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook chicken for 3-4 minutes per side, until cooked through and lightly charred. Baste with remaining apricot preserves during the last minute of cooking, if desired.
  4. While chicken cooks, heat remaining 1/2 tablespoon olive oil in a separate medium skillet over medium heat. Add riced cauliflower, chicken broth, and ground turmeric, and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook, stirring occasionally, for 5-7 minutes, until cauliflower is tender and heated through.
  5. Serve the grilled chicken skewers or pieces immediately with the turmeric cauliflower rice and a generous spoonful of fresh chakalaka.

Notes

Ensure your apricot preserves are Whole30 compliant (no added sugar). Using wooden skewers? Soak them in water for at least 30 minutes before grilling to prevent burning.
