Ingredients
- 1 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 ounce taco seasoning mix
- 0.5 cup water
- 8 flour tortillas (small)
- 1 cup shredded lettuce
- 1 Roma tomato (diced)
- 1 cup shredded cheddar cheese
- 0.5 cup sour cream
- 0.5 cup salsa
- 4 ounce corn tortilla chips
Instructions
- Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Once hot, add the ground beef and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes. Drain any excess grease.
- Stir in the taco seasoning mix and 1/2 cup water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
- While the beef simmers, warm the flour tortillas according to package directions (microwave, oven, or pan-fry quickly).
- Prepare your taco toppings: shred the lettuce, dice the Roma tomato, and have the shredded cheddar cheese, sour cream, and salsa ready.
- Serve the seasoned beef in the warm tortillas with your choice of toppings and a side of corn tortilla chips.
