Ingredients
- 6 ounce ground beef (halal, 80/20 lean)
- 0.25 yellow onion (grated)
- 1 clove garlic (minced)
- 0.25 cup fresh parsley (chopped)
- 0.5 teaspoon ground cumin
- 0.25 teaspoon ground coriander
- 0.25 teaspoon smoked paprika
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 2 tablespoon olive oil
- 0.5 cup couscous (uncooked)
- 0.5 cup water (hot or halal chicken broth)
- 1 tablespoon fresh mint (chopped)
- 0.5 mini cucumber (diced)
- 0.5 Roma tomato (diced)
- 1 tablespoon lemon juice
Instructions
- In a bowl, combine halal ground beef, grated yellow onion, minced garlic, 2 tablespoons of the chopped fresh parsley, ground cumin, ground coriander, smoked paprika, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Mix gently until just combined (do not overmix). Form the mixture around two skewers into an elongated oval shape.
- Preheat an outdoor grill or grill pan to medium-high heat. Lightly brush the kofta skewers with 1 tablespoon olive oil.
- Grill the kofta skewers for 4-6 minutes, turning occasionally, until nicely browned on all sides and cooked through. Remove from heat and let rest.
- Meanwhile, combine uncooked couscous and hot water or halal chicken broth in a heatproof bowl. Stir, then cover and let sit for 5 minutes, or until the liquid is absorbed. Fluff with a fork, then stir in 1 tablespoon olive oil and chopped fresh mint.
- In a small bowl, combine diced mini cucumber and diced Roma tomato. Season with lemon juice, the remaining 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper.
- Serve the grilled beef kofta skewers over the herbed couscous, accompanied by the cucumber-tomato salad.
Notes
If you don't have skewers, you can form the kofta into small patties and pan-fry or bake them instead.
