Grilled Beef Kofta Skewers

Spiced ground beef kofta, grilled to perfection, served alongside fluffy herbed couscous and a crisp cucumber-tomato salad.

  1. In a bowl, combine halal ground beef, grated yellow onion, minced garlic, 2 tablespoons of the chopped fresh parsley, ground cumin, ground coriander, smoked paprika, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Mix gently until just combined (do not overmix). Form the mixture around two skewers into an elongated oval shape.
  2. Preheat an outdoor grill or grill pan to medium-high heat. Lightly brush the kofta skewers with 1 tablespoon olive oil.
  3. Grill the kofta skewers for 4-6 minutes, turning occasionally, until nicely browned on all sides and cooked through. Remove from heat and let rest.
  4. Meanwhile, combine uncooked couscous and hot water or halal chicken broth in a heatproof bowl. Stir, then cover and let sit for 5 minutes, or until the liquid is absorbed. Fluff with a fork, then stir in 1 tablespoon olive oil and chopped fresh mint.
  5. In a small bowl, combine diced mini cucumber and diced Roma tomato. Season with lemon juice, the remaining 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper.
  6. Serve the grilled beef kofta skewers over the herbed couscous, accompanied by the cucumber-tomato salad.

Notes

If you don't have skewers, you can form the kofta into small patties and pan-fry or bake them instead.
