Greek Turkey Patties with Tzatziki and Chopped Salad

  1. Make the tzatziki: in a small bowl, mix the Greek yogurt, the grated and squeezed cucumber, 1 minced garlic clove, 1 tablespoon of the fresh dill, 1 tablespoon of the lemon juice, and 1/4 teaspoon of the salt. Stir well and chill in the refrigerator.
  2. Toss the salad: in a medium bowl, combine the diced cucumber, diced Roma tomatoes, finely chopped red onion, the remaining 1 tablespoon of fresh dill, 1 tablespoon of the olive oil, the remaining 1 tablespoon of lemon juice, and 1/4 teaspoon of the salt. Set aside.
  3. In a large mixing bowl, combine the ground turkey, crumbled feta cheese, beaten egg, the remaining 2 minced garlic cloves, dried oregano, black pepper, and the remaining 1/2 teaspoon of salt. Gently mix until evenly distributed, then shape into 4 equal patties (about 1/2-inch thick).
  4. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the turkey patties and cook for 5 to 6 minutes per side, until deeply golden brown and an instant-read thermometer inserted into the center reads 165°F.
  5. Plate each turkey patty alongside a generous serving of the chopped cucumber-tomato salad and a dollop of cold tzatziki.

Notes

Squeeze the grated cucumber thoroughly in a paper towel or clean kitchen towel to keep the tzatziki thick and creamy.
