Ingredients
- 1 pound ground turkey (93% lean)
- 4 ounce feta cheese (crumbled)
- 1 egg (large, beaten)
- 1 cup Greek yogurt (plain, nonfat)
- 2 English cucumbers (medium; 1 grated and squeezed dry, 1 diced)
- 2 Roma tomatoes (medium, diced)
- 0.5 red onion (medium, finely chopped)
- 3 clove garlic (minced)
- 2 tablespoon fresh dill (finely chopped)
- 1 lemon (juiced)
- 2 tablespoon olive oil (extra virgin)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Make the tzatziki: in a small bowl, mix the Greek yogurt, the grated and squeezed cucumber, 1 minced garlic clove, 1 tablespoon of the fresh dill, 1 tablespoon of the lemon juice, and 1/4 teaspoon of the salt. Stir well and chill in the refrigerator.
- Toss the salad: in a medium bowl, combine the diced cucumber, diced Roma tomatoes, finely chopped red onion, the remaining 1 tablespoon of fresh dill, 1 tablespoon of the olive oil, the remaining 1 tablespoon of lemon juice, and 1/4 teaspoon of the salt. Set aside.
- In a large mixing bowl, combine the ground turkey, crumbled feta cheese, beaten egg, the remaining 2 minced garlic cloves, dried oregano, black pepper, and the remaining 1/2 teaspoon of salt. Gently mix until evenly distributed, then shape into 4 equal patties (about 1/2-inch thick).
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the turkey patties and cook for 5 to 6 minutes per side, until deeply golden brown and an instant-read thermometer inserted into the center reads 165°F.
- Plate each turkey patty alongside a generous serving of the chopped cucumber-tomato salad and a dollop of cold tzatziki.
Notes
Squeeze the grated cucumber thoroughly in a paper towel or clean kitchen towel to keep the tzatziki thick and creamy.
