Ingredients
- 3 pork chops (patted dry)
- 3 tablespoon olive oil (extra virgin)
- 1 lemon (half juiced, half sliced into wedges)
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 pound baby potatoes (halved or quartered into 1-inch pieces)
- 2 tablespoon fresh parsley (chopped)
- 10 ounce fresh green beans (trimmed)
Instructions
- Season both sides of the pork chops with 1/2 teaspoon dried oregano, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Heat 1 tablespoon of olive oil in a large non-stick skillet or cast iron pan over medium-high heat. Add the halved baby potatoes to the hot pan and cook, stirring occasionally, for 12-15 minutes until tender and browned. Halfway through, squeeze the juice from half of the lemon over the potatoes and season with a pinch of salt.
- While potatoes are cooking, place the trimmed fresh green beans in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave on high for 3-5 minutes, or steam them on the stovetop, until crisp-tender.
- When potatoes are almost done, clear a space in the skillet or use a separate pan. Add 1 tablespoon of olive oil and increase heat to high. Once hot, add the seasoned pork chops. Sear for 2-3 minutes per side, until golden brown and cooked through (internal temperature of 145°F).
- Stir the chopped fresh parsley into the potatoes. Serve the hot pork chops alongside the lemon herb potatoes and steamed green beans. Garnish with fresh lemon wedges.
Notes
Thin-cut pork chops cook very quickly, so be careful not to overcook them, as they can dry out easily. Using a meat thermometer ensures perfect results.
