Ingredients
- 1 can chickpeas (15 oz can, rinsed and drained)
- 1 English cucumber (medium, diced)
- 1 cup cherry tomatoes (halved)
- 0.5 cup Kalamata olives (pitted)
- 4 ounce feta cheese (cubed)
- 0.75 cup hummus
- 3 whole wheat pitas (cut into wedges)
- 2 tablespoon olive oil (extra virgin)
- 1 tablespoon lemon juice
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
Instructions
- In a medium bowl, combine 1 can drained chickpeas, 1 diced cucumber, 1 cup halved cherry tomatoes, and 1/2 cup Kalamata olives.
- Drizzle the chickpea and vegetable mixture with 2 tablespoons olive oil and 1 tablespoon lemon juice. Season with 1/2 teaspoon dried oregano and 1/2 teaspoon salt, then toss well to coat.
- Divide the dressed chickpea salad evenly among 3 bento containers.
- Portion 1/4 cup hummus, 4 ounces cubed feta cheese, and 1 cut whole wheat pita into separate compartments in each bento box for packing.
Notes
Keep pita wedges in a small zip bag inside the bento to prevent them from absorbing moisture from the salad.
