Greek Lemon-Herb Chicken and Summer Vegetables

  1. Preheat oven to 400 degrees F. In a large skillet over medium-high heat, warm 1 tablespoon of the olive oil. Season chicken breast with 1/2 teaspoon of the salt, 1/4 teaspoon of the black pepper, and 1 teaspoon of dried oregano.
  2. Cook chicken in the skillet for 6 minutes, stirring occasionally, until browned on the exterior and cooked through to an internal temperature of 165 degrees F, then transfer to a plate.
  3. Bring a medium pot of salted water to a boil and cook the orzo pasta according to package instructions for 9 minutes until al dente; drain and toss with 1 tablespoon of olive oil.
  4. In the same skillet, add the remaining 1 tablespoon olive oil over medium heat. Sauté zucchini, cherry tomatoes, garlic, remaining 1/2 teaspoon oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper for 5 minutes until tender-crisp.
  5. Meanwhile, warm garlic bread slices on a baking sheet in the oven for 6 to 8 minutes until golden and crisp.
  6. Fold the cooked chicken and sautéed vegetables into the warm orzo pasta and serve immediately alongside the garlic bread.
