Ingredients
- 12 ounce cod fillets (cut into 2 equal portions)
- 3 cup green beans (trimmed)
- 2 cup green cabbage (shredded)
- 2 tablespoon chia seeds
- 1 tablespoon olive oil (extra virgin)
- 1 lemon (juiced and zested)
- 1 teaspoon dried oregano
- 2 clove garlic (minced)
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
- Toss green beans with 1/2 tablespoon of the olive oil, minced garlic, and half the salt and black pepper. Spread onto one side of the baking sheet.
- Place cod fillets on the other side of the baking sheet. Drizzle with remaining 1/2 tablespoon olive oil, lemon juice, lemon zest, dried oregano, and remaining salt and black pepper. Bake for 15 to 18 minutes until green beans are tender and cod flakes easily with a fork at 145°F.
- While fish bakes, combine shredded green cabbage and chia seeds in a mixing bowl with 1 tablespoon of water and a squeeze of fresh lemon, tossing until coated.
- Plate one warm cod fillet alongside half the roasted garlic green beans and half the fresh chia slaw.
Notes
Refrigerate the second portion in separate containers for fish and slaw to preserve the crunch of the vegetables.
