- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 can crushed tomatoes
- 1 can kidney beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 0.5 teaspoon dried oregano
- 0.5 teaspoon cayenne pepper
- 1 cup beef broth
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 3 cup corn tortilla chips (for serving)
- 1 cup shredded sharp cheddar cheese (for topping)
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat for 5-7 minutes, breaking it apart with a spoon. Drain any excess fat.
- Add the chopped yellow onion and minced garlic to the pot. Sauté for 3-5 minutes, until the onion softens and becomes translucent.
- Stir in the crushed tomatoes, drained and rinsed kidney beans, drained and rinsed black beans, chili powder, ground cumin, dried oregano, cayenne pepper, beef broth, kosher salt, and black pepper.
- Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 15-20 minutes to allow the flavors to meld. Stir occasionally.
- Serve the chili hot, garnished with corn tortilla chips and shredded sharp cheddar cheese.
Notes
For a deeper flavor, you can let the chili simmer longer, up to an hour, on low heat. Adjust cayenne pepper to your preferred spice level.
