  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat for 5-7 minutes, breaking it apart with a spoon. Drain any excess fat.
  2. Add the chopped yellow onion and minced garlic to the pot. Sauté for 3-5 minutes, until the onion softens and becomes translucent.
  3. Stir in the crushed tomatoes, drained and rinsed kidney beans, drained and rinsed black beans, chili powder, ground cumin, dried oregano, cayenne pepper, beef broth, kosher salt, and black pepper.
  4. Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 15-20 minutes to allow the flavors to meld. Stir occasionally.
  5. Serve the chili hot, garnished with corn tortilla chips and shredded sharp cheddar cheese.

Notes

For a deeper flavor, you can let the chili simmer longer, up to an hour, on low heat. Adjust cayenne pepper to your preferred spice level.
