Grandma's Beef and Bean Chili

  1. Prepare cornbread according to package directions while the chili cooks. You can use muffins or a small baking dish.
  2. Heat 1 tablespoon olive oil in a large Dutch oven or pot over medium-high heat. Add the ground beef and chopped yellow onion. Cook, breaking up the beef, until browned. Drain any excess fat.
  3. Stir in the minced garlic, 2 tablespoons chili powder, 1 tablespoon ground cumin, and 1/2 teaspoon cayenne pepper (if using). Cook for 1 minute until fragrant.
  4. Add the undrained diced tomatoes, rinsed kidney beans, rinsed black beans, beef broth, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Bring to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes, or up to 1 hour, stirring occasionally, for flavors to meld.
  5. Serve the chili hot with cornbread on the side. Offer shredded cheddar cheese and sour cream as optional toppings, allowing each family member to customize their bowl.

Notes

Chili can be made a day in advance for even deeper flavor. Reheat gently on the stovetop. Adjust cayenne pepper to your preferred spice level.
