Ingredients
- 1 pound ground pork
- 2 package basmati rice (pre-cooked pouches (8.5 oz each))
- 4 cup baby spinach
- 1 English cucumber (diced)
- 1 tablespoon avocado oil
- 1 tablespoon fresh ginger (freshly grated)
- 0.5 cup scallion greens (chopped, green tops only)
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 0.5 cup water
- 1 teaspoon salt
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat avocado oil in a large skillet over medium-high heat. Add ground pork, freshly grated ginger, scallion greens, ground turmeric, ground cumin, and salt. Cook for 7 minutes, breaking up the pork, until browned and cooked to an internal temperature of 160°F.
- Pour in 1/2 cup of water, bring to a simmer, and stir in baby spinach. Cook for 2 minutes until spinach is wilted and liquid has mostly reduced.
- Warm pre-cooked basmati rice pouches in the microwave according to package instructions.
- Divide warm basmati rice among four plates, spoon the spiced golden pork and spinach alongside, and serve with crisp diced cucumber and a garnish of fresh cilantro.
Notes
Reheats wonderfully for weekday lunches; keep the diced cucumber fresh on the side until serving.
