Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 yellow onion (medium, chopped)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 2 clove garlic (minced)
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 0.5 teaspoon ground cumin
- 1 can chickpeas (15 ounce, rinsed and drained)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 4 cup chicken broth
- 4 cup fresh spinach
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup whole wheat couscous (uncooked)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add lean ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add chopped yellow onion, carrots, and celery to the pot. Cook until vegetables are softened, about 7-8 minutes. Stir in minced garlic, ground ginger, ground turmeric, and ground cumin; cook for 1 minute more until fragrant.
- Stir in the rinsed chickpeas, diced tomatoes (undrained), chicken broth, salt, and black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for 15-20 minutes to allow flavors to meld.
- Meanwhile, prepare the whole wheat couscous according to package directions.
- Stir fresh spinach into the stew until wilted, about 2-3 minutes. Taste and adjust seasoning as needed.
- Serve the golden turkey and chickpea stew warm over the prepared whole wheat couscous.
Notes
For extra richness, a dollop of plain Greek yogurt can be added when serving (not included in nutritional calculation for Dairy-Free compatibility). Leftovers store well and are perfect for reheating.
