  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add lean ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  2. Add chopped yellow onion, carrots, and celery to the pot. Cook until vegetables are softened, about 7-8 minutes. Stir in minced garlic, ground ginger, ground turmeric, and ground cumin; cook for 1 minute more until fragrant.
  3. Stir in the rinsed chickpeas, diced tomatoes (undrained), chicken broth, salt, and black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for 15-20 minutes to allow flavors to meld.
  4. Meanwhile, prepare the whole wheat couscous according to package directions.
  5. Stir fresh spinach into the stew until wilted, about 2-3 minutes. Taste and adjust seasoning as needed.
  6. Serve the golden turkey and chickpea stew warm over the prepared whole wheat couscous.

Notes

For extra richness, a dollop of plain Greek yogurt can be added when serving (not included in nutritional calculation for Dairy-Free compatibility). Leftovers store well and are perfect for reheating.
