Ingredients
- 2 teaspoon vegetable oil (or cooking oil of your choice)
- 1 cup onion (chopped)
- 4 potatoes (diced, with skin on)
- 1.5 cup yellow split peas
- 5.5 cup chicken broth (low-sodium)
- 1 cup water
- 0.5 teaspoon onion powder
- 1 teaspoon poultry seasoning
Instructions
- Place the vegetable oil in a large pot or Dutch-oven style pan.
- Heat over medium-high.
- Add the onion and sauté until golden, about 2 to 3 minutes.
- Add the potatoes, yellow split peas, chicken broth, water, onion powder, and poultry seasoning and mix well.
- Bring to a boil and then lower the heat to a simmer.
- Cook uncovered until the peas are tender, about 45 minutes.
- Serve hot.
