Instructions
- Cook the white rice according to package directions. For quick cooking, use a microwaveable or instant variety, which usually takes 5-10 minutes. While the rice cooks, prepare the rest of the meal.
- In a small bowl, whisk together the honey, low-sodium soy sauce, 1 tablespoon water, cornstarch, minced garlic, and grated fresh ginger until smooth. Set aside.
- Heat the olive oil in a medium skillet over medium-high heat. Add the chicken breast pieces, season with salt and black pepper, and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- Reduce heat to medium. Pour the prepared honey garlic sauce over the chicken in the skillet. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats the chicken.
- While the chicken cooks, steam the frozen broccoli florets. You can do this in the microwave (following package directions) or a small saucepan with a splash of water, cooking until tender-crisp, about 3-5 minutes.
- Serve the golden honey garlic chicken and steamed broccoli over the cooked white rice. Garnish with sesame seeds, if using.
