Ingredients
- 2 tablespoon olive oil
- 2 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 yellow onion (large, diced)
- 3 clove garlic (minced)
- 1 tablespoon yellow curry powder
- 1 teaspoon ground ginger
- 13.5 ounce coconut milk
- 1 cup chicken broth
- 1 pound green beans
- 1.5 cup white rice (uncooked)
- 3 cup water
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Cook the white rice: Combine 1 1/2 cups white rice, 3 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
- While rice cooks, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 5-7 minutes, turning occasionally, until lightly browned.
- Add the diced yellow onion and minced garlic to the skillet with the chicken. Cook for 3-4 minutes, stirring, until the onion softens.
- Stir in 1 tablespoon yellow curry powder and 1 teaspoon ground ginger. Cook for 1 minute until fragrant.
- Pour in 1 can full-fat coconut milk and 1 cup chicken broth. Bring the mixture to a simmer, then add 1 pound frozen green beans. Cover and simmer for 5-7 minutes, or until the green beans are tender-crisp and the chicken is cooked through.
- Serve the Golden Curry Chicken hot over the prepared white rice. Garnish with chopped fresh cilantro, if desired.
