  1. Cook the white rice: Combine 1 1/2 cups white rice, 3 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While rice cooks, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 5-7 minutes, turning occasionally, until lightly browned.
  3. Add the diced yellow onion and minced garlic to the skillet with the chicken. Cook for 3-4 minutes, stirring, until the onion softens.
  4. Stir in 1 tablespoon yellow curry powder and 1 teaspoon ground ginger. Cook for 1 minute until fragrant.
  5. Pour in 1 can full-fat coconut milk and 1 cup chicken broth. Bring the mixture to a simmer, then add 1 pound frozen green beans. Cover and simmer for 5-7 minutes, or until the green beans are tender-crisp and the chicken is cooked through.
  6. Serve the Golden Curry Chicken hot over the prepared white rice. Garnish with chopped fresh cilantro, if desired.
