  1. Bring a large pot of salted water to a boil. Add whole wheat spaghetti and cook according to package directions until al dente. Drain.
  2. In a shallow dish, combine panko breadcrumbs, grated Parmesan cheese, dried Italian seasoning, 1/4 teaspoon salt, and black pepper.
  3. Dredge each chicken cutlet in the breadcrumb mixture, pressing gently to coat.
  4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add breaded chicken cutlets and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove and set aside.
  5. In the same skillet, add remaining 1 tablespoon olive oil and thinly sliced zucchini. Season with remaining 1/4 teaspoon salt. Sauté for 5-7 minutes until tender-crisp.
  6. While zucchini cooks, warm marinara sauce in a small saucepan.
  7. Serve crispy chicken cutlets with sautéed zucchini, whole wheat spaghetti tossed with warm marinara sauce, and a side of toasted garlic bread.
