Ingredients

- 1 yellow onion (finely diced)
- 2 clove garlic (minced)
- 2 can chickpeas (15-ounce, rinsed, drained)
- 1 can diced tomatoes (14.5-ounce, undrained, no sugar added)
- 1 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.25 cup vegetable broth
- 5 ounce fresh spinach
- 1 teaspoon salt (to taste)
- 0.5 teaspoon black pepper (to taste)
- 4 whole wheat pita breads (warmed)
- 1 cucumber (medium, thinly sliced)
Instructions
- Heat the 1 tablespoon olive oil in a large skillet over medium heat. Add the finely diced yellow onion and sauté for 3-4 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant. Add the rinsed and drained chickpeas, undrained diced tomatoes, 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, and 1/4 cup vegetable broth. Bring to a simmer.
- Cook for 5-7 minutes, stirring occasionally, until the liquid has slightly reduced. Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Cook until all the spinach has wilted, about 2-3 minutes.
- Season with salt and black pepper to taste. Serve the skillet mixture warm with warmed whole wheat pita breads for scooping and thinly sliced cucumber on the side.
Notes
To save time, use pre-minced garlic. If you don't have fresh spinach, a bag of frozen spinach can be used; just ensure it's thawed and squeezed of excess water.
